VEGGIE QUINOA

INGREDIENTS
1/2 cup of quinoa
2 cups of seasonal vegetables (I like kale, swiss chard, zucchini, summer squash and carrots)
1 TBL of fresh ginger chopped finely
1 teaspoon cinnamon
1 teaspoon turmeric
1/4 cup cilantro
1 stick of kombu or wakame flakes (seaweed high in minerals)
PROCESS
Cook quinoa according to package, adding ginger, spices and your choice of seaweed. Once cooked, fluff with a fork and then set aside.
Heat a deep heavy bottomed pot and add a splash of water
Add greens and vegetables and sauté until slightly tender. Be careful not to overcook your vegetables, or it removes so many nutrients!!
Serve in a large bowl adding the cooked veggies and quinoa. Generously sprinkle some chopped cilantro on top to finish. Great for detoxifying the body!
You can also add a simple dressing whisking together tahini, apple cider vinegar and olive oil.
If you prefer, you can just add a dash of coconut aminos and olive oil to give the meal some quick flavor and good healthy fats.
