kale kelp soup

INGREDIENTS
2 cups of water
1/2 cup of kale chopped
1/2 bok choy, carrots and celery chopped
1 tbsp of fresh ginger chopped finely
2 tbsp of chickpea miso
1 stick of kombu or wakame flakes (seaweed high in minerals)
1/2 teaspoon ground black pepper
1/4 cup cilantro
PROCESS
Bring water to a boil. Add vegetables, miso, seaweed and spices. Stirring to cook until slightly tender. Be careful not to overcook the veggies to retain nutrients! Add kelp noodles and cilantro, and then serve.
