EASY GLUTEN FREE BREAD

Makes 16 servings
INGREDIENTS
2 1/2 cups all purpose gluten free flour. Not all gluten free flours are created equal. You may experience different baking results depending on the blend you choose. Try to select one that is suitable for yeast baking.
1 tsp xanthan gum (leave out if your flour already has it in it)
1 tsp gluten free baking powder
1 packet rapid rise/instant yeast (2 1/4 tsp)
1/4 cup extra virgin olive oil
1/4 cup raw honey
1 tsp apple cider vinegar
1 1/2 cups warm water (100 -110 F)
3 egg whites from large eggs and room temperature
1 tsp sea salt
PROCESS
Spray a 9x5 in bread pan, or line with parchment paper. Move top oven rack to middle rack. Preheat oven to 350 F.
Add the gluten free flour, baking powder, and instant yeast to a large bowl and stir to combine
Add the olive oil, honey, and apple cider vinegar, and warm water to the flour mixture and mix on low for 1 minute. If you don’t have a mixer, just mix by hand with a paddled utensil. If you are using a stand-up mixer, use the paddle attachment, not the hook.
Add the egg whites and salt and mix on medium for 1 minute. The dough will look like thick cake batter.
Pour into the pan. Cover with a towel and allow to rise in a warm place for 30 minutes.
Bake horizontally on middle rack in oven for 30 min at 350 F. The bread will be golden brown. I usually stick a small sharp knife to test the middle to determine if it’s done or not :)
Allow the loaf to cool for 10 minutes in the pan. Then remove from pan and let it continue to cool. If you let it cool completely in the pan, it will get soggy.
Cool completely before slicing, using a serrated knife. Store bread in an airtight container and keep on counter at room temperature. You can freeze up to 3 months.
