CHOCOLATE CHIP COOKIES

GLUTEN FREE AND DAIRY FREE

Makes 2 dozen cookies

INGREDIENTS AND PROCESS

3 cups gluten free flour (unbleached and GMO free)

1 cup coconut sugar

2 cups organic pumpkin (1 can)

1 tsp baking soda

1 cup gluten free rolled oats

1 bag of dairy free chocolate morsels (I like

1 cup coconut oil (melted)

1/2 cup plain dairy free yogurt

1 tsp cinnamon

1/2 tsp sea salt

1 large egg (or substitute with a flax egg)

Preheat oven to 350 F. Combine all the dry ingredients in a large bowl and mix well into a dough. Scoop golf ball sized balls and place on parchment lined baking sheet. Bake for 15 minutes on middle rack.
