Amaranth Breakfast Porridge

INGREDIENTS
1 cup water
3/4 cup dried amaranth
1 tbsp ground flax seed
1/2 tbsp fresh ginger chopped
1 tsp cinnamon
1tsp cardamon
1 tsp turmeric
pinch pink salt
shredded coconut
Toppings you desire, such as goji berries, dried mulberries, pumpkin seeds, sunflower seeds
PROCESS
In a medium saucepan, bring the water to a boil. Add the amaranth, ginger, flax seed and spices, cover with a lid and simmer on medium heat for 10-15 minutes. Stir occasionally and continue adding water as needed until a soupy well-cooked consistency is reached. Serve with toppings of your choice (a splash of nut milk, shredded coconut, pumpkin seeds…just to name a few!).
